Fish and shrimp drying process reference:
First stage: Steam for about 10 minutes, until the shells can be easily removed;
Second stage: Drying. After steaming, the shrimp are evenly placed on a wire rack and put into a fish and shrimp drying room to dry. The drying temperature is about 50 to 65 degrees Celsius, and the drying time is about 3 to 4 hours. The relative humidity is controlled at about 18%.
